Kevin lagade denna “pesto”-pasta Ă„t mig i Berlin i höstas och sedan dess har det blivit en av mina favoritrĂ€tter. Den Ă€r frĂ€sch, lĂ€ttlagad och lĂ€tt att göra vegansk. Jag Ă€lskar recept som gĂ„r att variera in i oĂ€ndligheten- detta Ă€r precis ett sĂ„dant. Jag har lite olika ingredienser och mĂ€ngder varje gĂ„ng jag lagar detta, men just denna gĂ„ng hade jag:
1 mosad avokado
1 hackad mango
1/2 smulad fetaost (gÄr lika bra att utesluta)
I ask hackade körsbÀrstomater
6 hackade soltorkade tomater
1/2 finhackad gul lök
2 msk pesto
1 ask fĂ€rskost (gĂ„r att ersĂ€tta med 1 avokado, soja-fĂ€rskost eller oatly’s iMat)

Hacka allt och blanda till en farligt god gegga. Servera till pasta. Njut.
Kevin cooked this “pesto”+ pasta for me in Berlin last fall and since then it has become one of my favorite dishes. It is fresh, easy to prepare and easy to make vegan. I love recipes that can be varied in infinity- this is one of them. I use different ingredients and amounts every time I make this, but at this time I used:
1 mashed avocado
1 chopped mango
1/2 crumbled feta (it’s just as good without)
a box of cherry tomatoes- chopped in small pieces
6 chopped sun-dried tomatoes
1/2 finely chopped onion
2 tablespoons green pesto
1 box of cream cheese (or: 1 avocado, package of soy cheese or Oatly’s IMAT)

Chop everything and mix to a dangerously delicious mash. Serve with pasta. Enjoy.
